Hugh Jackson - Proprietor of Paddy Macs
Born in Cork City, Ireland. Work in a few bars as bartender. Went to London worked as head bertender for Youngs brewery. Was offered a job in cork as Manager of Fast Eddies night club and bar. Was offered G.M.job and I ran Fast Eddies for 3 years. Was offered a new job G.M of an Irish bar Chain . Came to U,S and worked construction to find out it was to hot in south Florida for an Irish guy just off the plane. Worked in a bar on Northlake, Fl. Finally I found a Irish bar Paddy Mac’s and started working there serving tables not for me to much enthusiasm. Started as bartender 1998. 2013 partnered in Paddy Mac’s with a friend. Finally took over as owner partner 2015. The American dream . Hard work does pay off Hugh.
Ann Gibbons - Head Chef
Born in County Galway, Ireland. Ann arrived in the United States in 198 having previously worked as a chef in the world renowned Ashford Castle Hotel located in County Mayo, Ireland. Ann has been at Paddy Mac's since the opening. She brings great cooking skills and assume Irish recipes to our customers every day.
Monica Rojas - Day Chef
Born in Donegal, Ireland. Monica arrived in the United States in 182 having previously worked as a Pastry Chef in the Ashford Castle Hotel. Monica has been with Paddy Mac's since the opening day and brings creativity and great dishes to our lunch customers.
